Pumpkin White Bean Dip

Ingredients:

  • 1 (15oz.) can white beans, rinsed and drained
  • 1 cup pumpkin puree
  • 4 Tbsp. olive oil. divided
  • 2 tsp lemon juice
  • 1 tsp salt
  • 2 garlic cloves chopped
  • 1 tsp paprika
  • 1/4 t black pepper
  • dash cumin

Directions:

  • Place banes, pumpkin, 2 Tbsp. oil, lemon juice, and salt in a food processor, and blend on high for 30 seconds.
  • Heat remaining 2 Tbsp. oil in a sauté pan.  Add garlic, paprika, pepper, and cumin and sauget 1-2 minute or until fragrant. (Be careful not to burn garlic!)
  • Transfer garlic and spices to food processor, and process until fully incorporated
