Pumpkin White Bean Dip
Ingredients:
- 1 (15oz.) can white beans, rinsed and drained
- 1 cup pumpkin puree
- 4 Tbsp. olive oil. divided
- 2 tsp lemon juice
- 1 tsp salt
- 2 garlic cloves chopped
- 1 tsp paprika
- 1/4 t black pepper
- dash cumin
Directions:
- Place banes, pumpkin, 2 Tbsp. oil, lemon juice, and salt in a food processor, and blend on high for 30 seconds.
- Heat remaining 2 Tbsp. oil in a sauté pan. Add garlic, paprika, pepper, and cumin and sauget 1-2 minute or until fragrant. (Be careful not to burn garlic!)
- Transfer garlic and spices to food processor, and process until fully incorporated
